You will ultimately end up with at least 2 props, one for everyday riding with a loaded boat and the magic top end prop. The everyday prop should be in the 24 pitch range and the top end prop might end up about a 26. Your best bet it to get with some performance boaters in your area and try every prop you can get your hands on to see what your boat-motor combo like. I found a omc srx to work well on my viper as well as a 26 yamaha drag, I just picked up a new et but will have to wait till spring to try it.
Do you have a low water pick up on the gearcase? Hows your steering, dual cable or hyd? What about solid motor mounts? All of these things will make it safer and easier to drive over 65, once it gets on the pad.
I also have to ask if the core has been replaced?
